The past few times I went to the grocery store I noticed that the flour and instant yeast was cleared out. It seems that everyone else though, “Hey! While I’m at home I can learn to bake bread!”. They did have dry active yeast, so I got that. Unfortunately the author of the bread baking book I have states “I use instant yeast”. That’s fine, but it would have been useful to have direction for dry active yeast as well, because they are NOT interchangeable. Cookbooks should really have options for substitutions.
Bread baking aside, I am cooking more. Restaurants are only open for takeout or delivery, as they should be, and I did spend about 6 weeks eating at restaurants. That said, if you are able you should order takeout for some of your favorite places. Help small businesses keep their heads above water. Like I said, if you can. A lot of people are hurting this month.
I am currently cooking from “The Greek Cook” by Rena Salaman. I got it from the library before they closed up. It’s divided up by seasons and it looks like I will get though 3 seasons before they open back up. Tonight I made “Elektra’s Cheese and Leek Pie”, which was freaking delicious and really easy to make.


In these past few days I’ve made the Calamari, which I didn’t get very crispy, and Beets with Garlic Sauce. Also the Greek Potato Salad was very good. I’ve really enjoyed every dish I’ve made from this book. The recipes are easy to follow and the food is good and healthy. I may buy this book Powell’s opens back up because I really love Greek food. It was my favorite food of everywhere I went this past trip.
Planning my meals is really helping me maintain a certain amount of order and scheduling to this crazy time. Also, only going to the grocery store every 1-2 weeks means I really have to plan ahead. And a list usually means I will not touch things that I’m not going to buy. Like I said, things are crazy now. I’m just trying to keep going and do my best to limit interaction with other people.
